A vardo is the painted wagon that carried cooks from town to town — kitchens on wheels, feeding whoever was hungry. We took the name and the spirit: bold flavor, no pretense, built to be eaten on the street with your hands.

Smashed patties on a screaming flat-top, chicken fried to order, fries buried in seasoning. Wrapped in paper, gone in minutes.
